Ingredients

  • 1 cup almond flour
  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 beaten egg (for brushing)
  • Optional toppings: everything bagel seasoning, sesame seeds, or shredded cheese


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine almond flour, baking powder, and salt in a mixing bowl.
  3. Add the cottage cheese and eggs to the dry mixture and mix until a thick dough forms.
  4. Divide the dough into six equal portions and roll each into a ball, then poke a hole in the center to shape into rings.
  5. Place the bagels on the prepared baking sheet and brush the tops with the beaten egg.
