Description

Delightful cornbread waffle bites with a crispy outside, fluffy inside, and a warm honey butter syrup.


Ingredients

  • 1 cup cornbread mix
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/4 cup cooked and crumbled bacon (optional)
  • 1/4 cup honey
  • 2 tbsp unsalted butter
  • 1 tbsp maple syrup (optional)
  • Pinch of salt


Instructions

  1. In a mixing bowl, combine the cornbread mix, buttermilk, and egg until smooth.
  2. Fold in cheddar cheese and bacon, if desired.
  3. Preheat a mini waffle maker and lightly grease it.
  4. Add about 1 tablespoon of batter per section and cook for 3-4 minutes until golden brown. Repeat with remaining batter.
  5. In a small saucepan over low heat, combine honey, butter, and maple syrup with a pinch of salt. Stir until smooth and remove from heat.
  6. Arrange waffle bites on a platter and drizzle with warm honey butter syrup. Serve immediately.

Notes

You can experiment with different types of cheese or add chopped jalapeños for additional flavor.
