Description

A simple yet comforting corn casserole that combines sweet corn, sour cream, and a golden topping for a delightful side dish perfect for family gatherings.


Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 can drained corn
  • 1 can creamed corn
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Jiffy corn muffin mix, drained corn, creamed corn, sour cream, and melted butter. Mix until smooth.
  3. If using, stir in the shredded cheese.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 45-50 minutes or until the top is golden brown and the mixture is set.
  6. For a crispy top, broil for the last few minutes, watching closely to prevent burning.

Notes
