Ingredients
- 1 box Jiffy corn muffin mix
- 1 can drained corn
- 1 can creamed corn
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy corn muffin mix, drained corn, creamed corn, sour cream, and melted butter. Mix until smooth.
- If using, stir in the shredded cheese.
- Pour the mixture into a greased baking dish.
- Bake for 45-50 minutes or until the top is golden brown and the mixture is set.
- For a crispy top, broil for the last few minutes, watching closely to prevent burning.
Notes
