Ingredients
- 1 1/2 lbs ground beef (680 g)
- 1 onion, diced
- 4 cloves garlic, crushed
- 2 cans kidney beans, drained & rinsed
- 128 oz can diced tomatoes (3.8 L)
- 16 oz can tomato paste (450 g)
- 5 oz can green chilies (410 g)
- 3 cups beef broth or water and 2 teaspoons of beef bullion powder (710 ml)
- SPICES:
- 2 tbsp (30 ml) chili powder
- 1/2 tsp (3 ml) salt
- 2 tsp (10 ml) cumin
- 1 tsp (5 ml) dried oregano
- 1/4 tsp (1 ml) cayenne pepper
- 1 tsp (5 ml) hot sauce
- 1 tsp (5 ml) sugar
- Note: can Substitute 110 oz (3.12 kg) can of diced tomatoes with chopped green chilies along with 1 other can of plain diced tomatoes for the 28-ounce can and green chilies.
Instructions
- In a big pot, cook the ground beef, then remove any extra grease. Toss in the diced onion and crushed garlic, cooking until they become tender.
- Stir in the spices, kidney beans, green chilies, tomatoes, and beef broth. Let the mixture reach a boil, then lower the heat to medium-low and let it gently cook for 30 minutes without a lid.
- Top with grated cheddar cheese and a dollop of sour cream before serving. Pair with cornbread.
Notes
- For a spicier flavor, increase the amount of cayenne pepper or hot sauce in the chili.
- Choose lean ground beef or ground turkey for a healthier option instead of regular ground beef.
- To enhance the taste and texture, consider adding a can of corn or bell peppers to the chili.
