Description

Ingredients

  • 1 1/2 lbs ground beef (680 g)
  • 1 onion, diced
  • 4 cloves garlic, crushed
  • 2 cans kidney beans, drained & rinsed
  • 128 oz can diced tomatoes (3.8 L)
  • 16 oz can tomato paste (450 g)
  • 5 oz can green chilies (410 g)
  • 3 cups beef broth or water and 2 teaspoons of beef bullion powder (710 ml)
  • SPICES:
  • 2 tbsp (30 ml) chili powder
  • 1/2 tsp (3 ml) salt
  • 2 tsp (10 ml) cumin
  • 1 tsp (5 ml) dried oregano
  • 1/4 tsp (1 ml) cayenne pepper
  • 1 tsp (5 ml) hot sauce
  • 1 tsp (5 ml) sugar
  • Note: can Substitute 110 oz (3.12 kg) can of diced tomatoes with chopped green chilies along with 1 other can of plain diced tomatoes for the 28-ounce can and green chilies.


Instructions

  1. In a big pot, cook the ground beef, then remove any extra grease. Toss in the diced onion and crushed garlic, cooking until they become tender.
  2. Stir in the spices, kidney beans, green chilies, tomatoes, and beef broth. Let the mixture reach a boil, then lower the heat to medium-low and let it gently cook for 30 minutes without a lid.
  3. Top with grated cheddar cheese and a dollop of sour cream before serving. Pair with cornbread.

Notes

  • For a spicier flavor, increase the amount of cayenne pepper or hot sauce in the chili.
  • Choose lean ground beef or ground turkey for a healthier option instead of regular ground beef.
  • To enhance the taste and texture, consider adding a can of corn or bell peppers to the chili.
