  • 1 onion, chopped

  • 25 cup (60 ml) snipped parsley
  • 5 teaspoon (3 ml) cracked black pepper
  • 5 teaspoon (3 ml) dried thyme leaves
  • 1 bay leaf
  • 75 pound (340 g) beef, cut into cubes
  • 2 cups (380 g) cooked rice
  • 2 tablespoons (30 ml) lime juice

Instructions

  1. Start by preparing all necessary items.
  2. In a large pot, mix together the beef broth, chopped onion, sliced celery, sliced carrots, snipped parsley, cracked black pepper, dried thyme leaves, and bay leaf; bring this mixture to a rolling boil. Lower the heat and let it gently simmer until the onion and celery start becoming tender, roughly 10 to 15 minutes.
  3. Add in the beef cubes and let the mixture simmer until the beef is cooked through and no longer pink inside, which should take about 5 to 10 minutes. Take out the bay leaf and discard it.
  4. Mix in the cooked rice and lime juice; stir continuously until the rice is thoroughly warmed and the grains are separated, which should take around 1 minute.
  5. Finish by adding lime slices on top for decoration.
