Description

A simple yet flavorful coconut rice recipe that transports you to tropical shores with every bite.


Ingredients

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 bay leaf (optional)


Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, salt, and bay leaf.
  3. Bring to a boil over medium-high heat.
  4. Once it reaches a boil, reduce the heat to low and cover.
  5. Simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for another 5-10 minutes.
  7. Fluff the rice with a fork and serve.
