Ingredients
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 bay leaf (optional)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, salt, and bay leaf.
- Bring to a boil over medium-high heat.
- Once it reaches a boil, reduce the heat to low and cover.
- Simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for another 5-10 minutes.
- Fluff the rice with a fork and serve.
Notes
Adjust the sweetness by increasing sugar if desired. Consider adding a pinch of vanilla extract for a richer flavor.
