Ingredients
- 2 cups white rice, rinsed
- 4 cups unsweetened coconut milk
- 1 inch fresh ginger, sliced into 4 pieces
- Pinch of salt
Instructions
- Place the rinsed rice, coconut milk, ginger, and salt in a large saucepan.
- Cover the saucepan and set it over medium-high heat.
- Bring the mixture to a boil, watching for the coconut milk to bubble.
- Once boiling, reduce the heat to low and let it simmer for 15-20 minutes.
- Cook until the coconut milk absorbs completely and the rice turns tender.
- Remove the ginger pieces from the rice.
- Fluff the rice with a fork before serving.
