Description

Ingredients

  • 2 cups white rice, rinsed
  • 4 cups unsweetened coconut milk
  • 1 inch fresh ginger, sliced into 4 pieces
  • Pinch of salt


Instructions

  1. Place the rinsed rice, coconut milk, ginger, and salt in a large saucepan.
  2. Cover the saucepan and set it over medium-high heat.
  3. Bring the mixture to a boil, watching for the coconut milk to bubble.
  4. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes.
  5. Cook until the coconut milk absorbs completely and the rice turns tender.
  6. Remove the ginger pieces from the rice.
  7. Fluff the rice with a fork before serving.
