Description

A fragrant and creamy rice dish made with jasmine rice and infused with coconut milk and ginger, perfect for accompanying various meals.


Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 2 tablespoons fresh ginger, minced
  • 1 tablespoon vegetable oil
  • Crispy fried ginger for topping (optional)
  • Chopped cilantro for garnish (optional)


Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. In a large saucepan, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is fully cooked and the liquid is absorbed.
  4. In a small pan, heat the vegetable oil over medium heat and add the minced ginger. Sauté until golden brown and crispy, then remove from heat.
  5. Fluff the cooked rice with a fork, and serve topped with crispy ginger and chopped cilantro if desired.

Notes

Adjust ginger quantity according to taste. Crispy fried ginger adds texture and flavor.
