Description
A light and flavorful poached cod dish simmered in creamy coconut milk with fresh dill and zesty lemon.
Ingredients
- 4 cod fillets
- 1 can of coconut milk
- 1/4 cup of fresh dill, chopped
- 2 tablespoons of lemon juice
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of olive oil
- Lemon wedges for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Pour in coconut milk and bring it to a simmer.
- Stir in dill, lemon juice, salt, and pepper.
- Gently place cod fillets into the skillet, spooning some of the coconut milk mixture over them.
- Cover and cook for 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.
- Serve warm with lemon wedges.
Notes
Squeeze extra lemon juice over the dish for brightness, and consider adding a pinch of red pepper flakes for heat.
