Description

A light and flavorful poached cod dish simmered in creamy coconut milk with fresh dill and zesty lemon.


Ingredients

  • 4 cod fillets
  • 1 can of coconut milk
  • 1/4 cup of fresh dill, chopped
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • Lemon wedges for serving


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  2. Pour in coconut milk and bring it to a simmer.
  3. Stir in dill, lemon juice, salt, and pepper.
  4. Gently place cod fillets into the skillet, spooning some of the coconut milk mixture over them.
  5. Cover and cook for 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.
  6. Serve warm with lemon wedges.

Notes

Squeeze extra lemon juice over the dish for brightness, and consider adding a pinch of red pepper flakes for heat.
