Ingredients
- 1 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour

- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
