Description

A nostalgic and comforting dish of bell peppers stuffed with a hearty mixture of ground beef, rice, and spices.


Ingredients

  • 4 bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (about 15 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground beef with the onions and garlic until the meat is browned.
  4. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Stuff the mixture into each bell pepper until full.
  6. Place the stuffed peppers standing up in a baking dish and cover with foil.
  7. Bake for 25-30 minutes until the peppers are tender.
  8. Remove the foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until the cheese is melted.
  9. Serve warm.

Notes

For extra tenderness, consider boiling the peppers for 5-10 minutes before stuffing. You can also experiment with cheese varieties for different flavors.
