A nostalgic and comforting dish of bell peppers stuffed with a hearty mixture of ground beef, rice, and spices.
Ingredients
- 4 bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (about 15 oz)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, cook the ground beef with the onions and garlic until the meat is browned.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Stuff the mixture into each bell pepper until full.
- Place the stuffed peppers standing up in a baking dish and cover with foil.
- Bake for 25-30 minutes until the peppers are tender.
- Remove the foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until the cheese is melted.
- Serve warm.
Notes
For extra tenderness, consider boiling the peppers for 5-10 minutes before stuffing. You can also experiment with cheese varieties for different flavors.
