Ingredients
- 1/2 cup (120 ml) unsalted butter
- 2 tablespoons (30 ml) olive oil
- 4 cups (960 ml) sliced onions
- 5 cups (1.2 L) beef broth
- 2 tablespoons (30 ml) apple juice
- 1 teaspoon (5 ml) dried thyme
- 1 pinch salt and pepper to taste
- 4 slices French bread
- 4 slices beef-based cheese
- 2 slices plant-based Swiss cheese, diced
- 1/4 cup (60 g) grated plant-based Parmesan cheese
Instructions
- Collect all necessary components.
- In a large pot, combine the butter and olive oil over medium heat until melted. Introduce the onions and stir them frequently until they become soft and see-through, ensuring they do not caramelize.
- Pour in the beef broth along with the apple juice and thyme. Add salt and pepper to your liking. Allow the mixture to gently cook for half an hour. In the meantime, set the oven broiler to preheat.
- Distribute the soup into heatproof bowls, placing a slice of bread on top of each serving (feel free to break the bread if desired). On top of each bread slice, arrange a slice of beef-based cheese, half a slice of diced plant-based Swiss cheese, and a tablespoon of grated plant-based Parmesan cheese.
- Position the bowls on a baking sheet and broil them in the preheated oven until the cheese becomes bubbly and lightly golden, approximately 2 to 3 minutes.
