Ingredients

  • 1/2 cup (120 ml) unsalted butter
  • 2 tablespoons (30 ml) olive oil
  • 4 cups (1 L) sliced onions
  • 5 cups (1.2 L) beef broth
  • 2 tablespoons (30 ml) apple juice
  • 1 teaspoon (5 ml) dried thyme
  • 1 pinch salt and pepper to taste
  • 4 slices French bread
  • 4 slices provolone cheese
  • 2 slices beef bacon, diced
  • 1/4 cup (60 ml) grated Parmesan cheese


Instructions

  1. Collect all the necessary items.
  2. In a large pot, combine the butter and olive oil over medium heat until melted. Add the onions and stir continuously until they become soft and clear, ensuring they don’t change color.
  3. Introduce the beef broth, apple juice, and thyme into the mixture. Add a touch of salt and pepper for seasoning, then allow it to gently simmer for half an hour. While waiting, set the oven’s broiler to preheat.
  4. Pour the soup into bowls that are safe for the oven, then top each with a slice of French bread (feel free to tear the bread into pieces if desired). On each piece of bread, place a slice of provolone, some diced beef bacon, and a sprinkle of Parmesan cheese.
