Description

A comforting classic enchirito filled with savory ground beef, creamy refried beans, and covered in a rich red enchilada sauce.


Ingredients

  • 1 can (16 oz) refried beans
  • 1 lb ground beef
  • 1/4 cup water
  • 1 packet taco seasoning
  • 6 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup shredded Monterey Jack cheese
  • Sour cream (for serving)
  • Black olives (for garnish)
  • Chopped onions (for garnish)


Instructions

  1. Preheat your oven to 375°F.
  2. Cook the ground beef in a medium pan over medium heat until no longer pink, then drain excess grease.
  3. Stir in the taco seasoning and water, letting it bubble for a couple of minutes.
  4. Add the refried beans, blending until warm.
  5. Spread the beef and bean mixture down the center of each tortilla and roll them snugly.
  6. Place the rolled tortillas in a baking dish seam-side down.
  7. Pour the enchilada sauce over the wraps.
  8. Sprinkle shredded cheddar and Monterey Jack cheeses on top.
  9. Bake uncovered for 20-25 minutes, or until cheese melts and bubbles.
  10. Serve with optional sour cream, black olives, and chopped onions.

Notes

For variations, try using shredded beef or adding corn and black beans. Warming tortillas before wrapping can prevent breaking.
