Description
A comforting classic enchirito filled with savory ground beef, creamy refried beans, and covered in a rich red enchilada sauce.
Ingredients
- 1 can (16 oz) refried beans
- 1 lb ground beef
- 1/4 cup water
- 1 packet taco seasoning
- 6 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 can (10 oz) red enchilada sauce
- 1/2 cup shredded Monterey Jack cheese
- Sour cream (for serving)
- Black olives (for garnish)
- Chopped onions (for garnish)
Instructions
- Preheat your oven to 375°F.
- Cook the ground beef in a medium pan over medium heat until no longer pink, then drain excess grease.
- Stir in the taco seasoning and water, letting it bubble for a couple of minutes.
- Add the refried beans, blending until warm.
- Spread the beef and bean mixture down the center of each tortilla and roll them snugly.
- Place the rolled tortillas in a baking dish seam-side down.
- Pour the enchilada sauce over the wraps.
- Sprinkle shredded cheddar and Monterey Jack cheeses on top.
- Bake uncovered for 20-25 minutes, or until cheese melts and bubbles.
- Serve with optional sour cream, black olives, and chopped onions.
Notes
For variations, try using shredded beef or adding corn and black beans. Warming tortillas before wrapping can prevent breaking.
