Ingredients
- 4 ounces diced beef bacon (113 g)
- 2 pounds chicken parts (900 g)
- 8 cups water (1900 ml)
- 3 potatoes, cubed
- 3 onions, chopped
- 1 (28 ounce (794 g)) can whole peeled tomatoes, chopped
- 2 cups canned whole kernel corn (340 g)
- 1 (10 ounce) package frozen lima beans (280 g)
- 1 tablespoon (15 ml) soy sauce
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) ground black pepper
Instructions
- In a large pot over high heat, place the diced beef bacon, chicken parts, and water. Bring the mixture to a rolling boil. Lower the heat to a gentle simmer, cover the pot, and let it cook for 45 minutes or until the chicken is tender.
- Take the chicken out and let it cool until you can handle it comfortably. Remove the meat from the bones, discarding the skin and bones, then chop the chicken into small pieces. Add the chicken back into the pot.
- Add the cubed potatoes, chopped onions, chopped tomatoes, canned corn, frozen lima beans, soy sauce, salt, and ground black pepper to the pot. Mix everything thoroughly and let it simmer, uncovered, for 1 hour.
