Ingredients
- 1 Tbsp vegetable oil (15 ml)
- 2 lbs cubed beef, chuck roast (900 g)
- 1 (15 oz) can stewed tomatoes (425 g)
- 1 (6 oz) can tomato paste (170 g)
- 4 cups beef broth (960 ml)
- 1 tablespoon (15 ml) Worcestershire sauce
- 1 medium onion, chopped
- 3 large carrots, sliced
- 3 ribs celery, chopped
- 1 cup (240 ml) fresh or frozen peas
- 1 lb baby potatoes, sliced in half (450 g)
- 2 teaspoons (10 ml) garlic powder
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1 tablespoon (15 ml) fresh thyme, or 1 teaspoon (5 ml) dried
- 2 teaspoons (10 ml) fresh rosemary, or 1/2 teaspoon (3 ml) dried
- 1 bay leaf
Instructions
- Pour vegetable oil into a large Dutch oven or pot over medium-high heat until the oil shimmers. Place the beef cubes in the pot and cook until browned on all sides, approximately 5 minutes.
- Combine the remaining ingredients and bring the mixture to a rolling boil. Cover the pot and let it simmer for 2 to 3 hours, or until the beef and vegetables become tender. Serve and savor!
- Pour vegetable oil into the bottom of your Instant Pot and activate the sauté function. Once it’s hot, add the beef and sear it until browned on all sides.
- Introduce the remaining ingredients, secure the Instant Pot lid, and choose the meat/stew option (approximately 35 minutes).
- After cooking, allow the Instant Pot to rest for about 12 minutes, then release the pressure by turning the valve to the venting position. Serve and enjoy!
- Pour vegetable oil into a large skillet over medium-high heat until the oil shimmers. Add the beef cubes and brown them on all sides, about 5 minutes. (Alternatively, you can skip this step and add the raw beef directly to your slow cooker, but browning enhances the flavor.)
- Transfer the browned beef to your slow cooker, add the remaining ingredients, cover, and cook on low for 7 to 8 hours. Serve and delight in the flavors!
