Ingredients
- ¼ cup (57 g) butter, melted
- 1 ½ cups (354 g) milk
- 1 teaspoon lemon juice
- 2 large eggs
- 3 tablespoons white sugar
- 3 tablespoons light brown sugar
- 2 ½ cups (300 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons ground cinnamon
- For the cinnamon whipped cream:
- 1 cup (240 g) heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Instructions
- Start by whipping up the cinnamon whipped cream. Add the heavy whipping cream, powdered sugar, vanilla extract, and ground cinnamon to a mixing bowl.
- Use an electric mixer or stand mixer to whip the mixture until stiff peaks form.
- Refrigerate the whipped cream until ready to serve.
- Preheat your waffle iron to its highest heat setting.
- In a large bowl, whisk together the melted butter, milk, lemon juice, eggs, and vanilla extract until well combined.
- Lightly brush the waffle iron with melted butter.
- Pour enough batter into the waffle iron to spread to the edges without overfilling.
- Close the waffle iron and cook for 3–5 minutes, or until the waffles turn golden and crisp.
- Carefully remove the waffles and serve them hot with a generous dollop of cinnamon whipped cream on top.
