Description

Delightful muffins that encapsulate the essence of French toast, infused with warm spices and a crunchy cinnamon sugar coating.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, salt, and ground cinnamon until combined.
  3. In a separate large bowl, whisk together the melted butter, milk, eggs, ground nutmeg, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
  8. In a shallow dish, combine the remaining 1/2 cup granulated sugar and 1 tablespoon of ground cinnamon, then dip the tops of the warm muffins into the mixture.
  9. Return the muffins to the oven for 2-3 minutes to crisp the tops.

Notes

Try to avoid overmixing the batter. A few lumps are perfectly fine.
