Description

These cinnamon roll protein muffins combine the comforting flavor of cinnamon rolls with the nutrition of protein powder and oats, perfect for breakfast or a healthy snack.


Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 tablespoon ground cinnamon
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk of choice
  • Optional: chopped nuts or raisins


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
  2. In a large mixing bowl, combine the rolled oats, protein powder, ground cinnamon, baking powder, and any optional ingredients, such as nuts or raisins.
  3. In another bowl, whisk together the honey or maple syrup, eggs, applesauce, vanilla extract, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
