A delightful mash-up of cinnamon rolls and banana bread, combining sweet overripe bananas with warm cinnamon for a comforting dessert.
Ingredients
- 3 overripe mashed bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 tsp vanilla extract
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 cup regular or gluten-free all-purpose flour
- 1 cup old-fashioned rolled oats
- 4 tbsp melted vegan butter (for cinnamon filling)
- 1/3 cup light brown sugar
- 2 tbsp cinnamon (for filling)
- 3/4 cup powdered sugar (for frosting)
- 2 tbsp melted vegan butter (for frosting)
- 2 oz softened vegan cream cheese (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the overripe bananas in a large bowl until smooth.
- Mix in the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract until combined.
- In another bowl, whisk together flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour half of the batter into a greased or lined loaf pan.
- For the filling, combine brown sugar and cinnamon; sprinkle over the batter in the pan.
- Pour remaining batter over the top and swirl gently with a knife.
- Bake for 50-55 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
- For frosting, mix powdered sugar, melted vegan butter, softened vegan cream cheese, and remaining cinnamon.
- Drizzle frosting over the cooled bread.
Notes
Use overripe bananas for maximum sweetness and moisture. Let the bread cool completely before applying the frosting to maintain its shape.
