Description

A delightful mash-up of cinnamon rolls and banana bread, combining sweet overripe bananas with warm cinnamon for a comforting dessert.


Ingredients

  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup regular or gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 4 tbsp melted vegan butter (for cinnamon filling)
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon (for filling)
  • 3/4 cup powdered sugar (for frosting)
  • 2 tbsp melted vegan butter (for frosting)
  • 2 oz softened vegan cream cheese (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the overripe bananas in a large bowl until smooth.
  3. Mix in the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract until combined.
  4. In another bowl, whisk together flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Pour half of the batter into a greased or lined loaf pan.
  7. For the filling, combine brown sugar and cinnamon; sprinkle over the batter in the pan.
  8. Pour remaining batter over the top and swirl gently with a knife.
  9. Bake for 50-55 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  11. For frosting, mix powdered sugar, melted vegan butter, softened vegan cream cheese, and remaining cinnamon.
  12. Drizzle frosting over the cooled bread.

Notes

Use overripe bananas for maximum sweetness and moisture. Let the bread cool completely before applying the frosting to maintain its shape.
