Description

Delightful cinnamon apple cottage cheese bites that are healthy and easy to make, perfect for breakfast or snacks.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional, for added sweetness)
  • 1/2 tsp baking powder
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. Combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt in a mixing bowl. Mix until well combined.
  3. Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
  4. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
  5. Bake for 18–20 minutes or until the bites are set and lightly golden on top.
  6. Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  7. Enjoy warm or store in the fridge for up to 4 days.

Notes

For a fun twist, try adding chopped nuts or swapping cinnamon for nutmeg or pumpkin spice. Serve warm for the best flavor.
