Description
A refreshing side dish that elevates simple white rice with vibrant lime and fresh cilantro flavors.
Ingredients
- 2 cups white rice
- 4 cups water
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, combine the rice, water, and salt; bring to a boil.
- Once boiling, reduce heat, cover, and let simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.
- Remove the pot from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then stir in lime juice, olive oil, cilantro, and pepper.
- Serve as a side dish or base for bowls.
Notes
For maximum flavor, use fresh limes and adjust the cilantro to taste. Substitute parsley if preferred.
