Description

A refreshing side dish that elevates simple white rice with vibrant lime and fresh cilantro flavors.


Ingredients

  • 2 cups white rice
  • 4 cups water
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, combine the rice, water, and salt; bring to a boil.
  3. Once boiling, reduce heat, cover, and let simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.
  4. Remove the pot from heat and let it sit covered for 5 minutes.
  5. Fluff the rice with a fork, then stir in lime juice, olive oil, cilantro, and pepper.
  6. Serve as a side dish or base for bowls.

Notes

For maximum flavor, use fresh limes and adjust the cilantro to taste. Substitute parsley if preferred.
