A vibrant and flavorful side dish combining jasmine rice, coconut milk, fresh cilantro, and zesty lime juice, perfect for any meal.
Ingredients
- 1 cup jasmine rice or basmati rice
- 1 ½ cups full-fat or light canned coconut milk
- ½ teaspoon salt
- ½ cup chopped fresh cilantro
- Juice and zest of ½ a large lime
Instructions
- Rinse the jasmine rice thoroughly under cold water until the water runs clear, then drain and set aside.
- In a medium pot, add the rinsed rice, coconut milk, and salt.
- Cover the pot and bring to a simmer over medium-high heat.
- Once simmering, reduce the heat to medium-low and cook for 15-20 minutes until the liquid is absorbed and the rice is tender.
- After cooking, remove the pot from heat and let it sit for 5 minutes.
- Fluff the rice with a fork and add the chopped cilantro, lime zest, and lime juice. Stir to combine.
