Ingredients
- 2 pounds (907 g) boneless, skinless chicken thighs (900 grams)
- 2 tablespoon s vegetable oil (30 ml)
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cup (480 ml) s roasted Hatch green chiles, peeled and chopped (about 300 grams)
- 1 teaspoon (5 ml) ground cumin
- 1 teaspoon (5 ml) dried oregano
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 2 cups chicken broth (480 ml)
- 8 large flour tortillas
- 2 cup (480 ml) s shredded Monterey Jack cheese (200 grams)
- 1/2 cup sour cream (120 ml)
- 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
Instructions
- Preheat a large skillet over medium heat and add 2 tablespoons of vegetable oil.
- Season the chicken thighs with salt and black pepper.
- Add the chicken thighs to the skillet and cook until browned on both sides, about 5-6 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute.
- Stir in the roasted Hatch green chiles, ground cumin, and dried oregano.
- Return the chicken to the skillet and pour in the chicken broth.
- Bring the mixture to a simmer and cover the skillet.
- Cook for 25-30 minutes, or until the chicken is fully cooked and tender.
- Remove the chicken from the skillet and shred it using two forks.
- Return the shredded chicken to the skillet and stir to combine with the sauce.
- Preheat your oven to 350°F (175°C).
- Warm the flour tortillas in the microwave or a dry skillet until pliable.
- Spoon a portion of the chicken mixture onto each tortilla.
- Sprinkle shredded Monterey Jack cheese over the chicken.
- Roll up the tortillas, tucking in the sides as you go, to form burritos.
- Place the burritos seam-side down in a baking dish.
- Pour any remaining sauce over the burritos in the baking dish.
- Sprinkle additional cheese on top of the burritos.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving.
- Serve the burritos topped with sour cream and chopped fresh cilantro.
