Ingredients

  • 2 pounds (907 g) boneless, skinless chicken thighs (900 grams)
  • 2 tablespoon s vegetable oil (30 ml)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cup (480 ml) s roasted Hatch green chiles, peeled and chopped (about 300 grams)
  • 1 teaspoon (5 ml) ground cumin
  • 1 teaspoon (5 ml) dried oregano
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 2 cups chicken broth (480 ml)
  • 8 large flour tortillas
  • 2 cup (480 ml) s shredded Monterey Jack cheese (200 grams)
  • 1/2 cup sour cream (120 ml)
  • 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)


Instructions

  1. Preheat a large skillet over medium heat and add 2 tablespoons of vegetable oil.
  2. Season the chicken thighs with salt and black pepper.
  3. Add the chicken thighs to the skillet and cook until browned on both sides, about 5-6 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the diced onion and cook until translucent, about 5 minutes.
  6. Add the minced garlic and cook for an additional 1 minute.
  7. Stir in the roasted Hatch green chiles, ground cumin, and dried oregano.
  8. Return the chicken to the skillet and pour in the chicken broth.
  9. Bring the mixture to a simmer and cover the skillet.
  10. Cook for 25-30 minutes, or until the chicken is fully cooked and tender.
  11. Remove the chicken from the skillet and shred it using two forks.
  12. Return the shredded chicken to the skillet and stir to combine with the sauce.
  13. Preheat your oven to 350°F (175°C).
  14. Warm the flour tortillas in the microwave or a dry skillet until pliable.
  15. Spoon a portion of the chicken mixture onto each tortilla.
  16. Sprinkle shredded Monterey Jack cheese over the chicken.
  17. Roll up the tortillas, tucking in the sides as you go, to form burritos.
  18. Place the burritos seam-side down in a baking dish.
  19. Pour any remaining sauce over the burritos in the baking dish.
  20. Sprinkle additional cheese on top of the burritos.
  21. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  22. Remove from the oven and let cool slightly before serving.
  23. Serve the burritos topped with sour cream and chopped fresh cilantro.
