Ingredients
- 4 large poblano peppers (4 pieces)

- 1 cup (240 ml) shredded Monterey Jack cheese (100 grams)
- 1 cup (240 ml) shredded cheddar cheese (100 grams)
- 1 cup (240 ml) tomato sauce (240 milliliters)
- 2 tablespoons (30 ml) vegetable oil (30 milliliters)
- 3 eggs (3 pieces)
- 1/4 cup (60 ml) all-purpose flour (30 grams)
- 1/4 cup (60 ml) milk (60 milliliters)
Instructions
- Preheat the oven to 375°F (190°C).
- Roast the poblano peppers over an open flame until the skins are charred.
- Place the roasted peppers in a bowl and cover with plastic wrap to steam.
- Once cooled, peel off the charred skins and carefully slit each pepper to remove the seeds.
- Heat the vegetable oil in a skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is soft.
- Add the ground beef to the skillet and cook until browned.
- Stir in the cumin, chili powder, salt, and black pepper.
- Remove the skillet from heat and mix in the shredded Monterey Jack cheese.
- Stuff each poblano pepper with the beef and cheese mixture.
- Place the stuffed peppers in a baking dish.
- In a bowl, whisk together the eggs, flour, and milk until smooth.
- Pour the egg mixture over the stuffed peppers in the baking dish.
- Top the peppers with the shredded cheddar cheese.
- Pour the tomato sauce over the top of the peppers.
- Bake in the preheated oven for 25-30 minutes.
- Remove from the oven and let cool slightly before serving.
