Ingredients

  • 4 large poblano peppers (4 pieces)
  • 1 pound (454 g) ground beef (450 grams)

  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) cumin
  • 1 teaspoon (5 ml) chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup (240 ml) shredded Monterey Jack cheese (100 grams)
  • 1 cup (240 ml) shredded cheddar cheese (100 grams)
  • 1 cup (240 ml) tomato sauce (240 milliliters)
  • 2 tablespoons (30 ml) vegetable oil (30 milliliters)
  • 3 eggs (3 pieces)
  • 1/4 cup (60 ml) all-purpose flour (30 grams)
  • 1/4 cup (60 ml) milk (60 milliliters)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the poblano peppers over an open flame until the skins are charred.
  3. Place the roasted peppers in a bowl and cover with plastic wrap to steam.
  4. Once cooled, peel off the charred skins and carefully slit each pepper to remove the seeds.
  5. Heat the vegetable oil in a skillet over medium heat.
  6. Add the chopped onion and minced garlic to the skillet, cooking until the onion is soft.
  7. Add the ground beef to the skillet and cook until browned.
  8. Stir in the cumin, chili powder, salt, and black pepper.
  9. Remove the skillet from heat and mix in the shredded Monterey Jack cheese.
  10. Stuff each poblano pepper with the beef and cheese mixture.
  11. Place the stuffed peppers in a baking dish.
  12. In a bowl, whisk together the eggs, flour, and milk until smooth.
  13. Pour the egg mixture over the stuffed peppers in the baking dish.
  14. Top the peppers with the shredded cheddar cheese.
  15. Pour the tomato sauce over the top of the peppers.
  16. Bake in the preheated oven for 25-30 minutes.
  17. Remove from the oven and let cool slightly before serving.
