Ingredients

  • 1 lb (454 g) lean ground beef
  • 1/3 cup (80 ml) onion, chopped
  • 1/2 teaspoon (2.5 ml) garlic powder
  • 1/2 teaspoon (2.5 ml) seasoning salt
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1.25 ml) pepper
  • 1/4 teaspoon (1.25 ml) hot sauce
  • 2 cups (200 g) shredded Cheddar cheese
  • 1 can (4 oz / 113 g) whole green chiles
  • 6 eggs
  • 2 cups (480 ml) milk
  • 1/3 cup (40 g) flour

Instructions

  1. Heat your oven to 350°F (175°C).
  2. Cook the ground beef along with the chopped onion in a frying pan until browned, then remove excess fat.
  3. Incorporate the spices into the meat mixture and put it aside.
  4. Cut the green chilies into pieces roughly 1 ½ inches in size.
  5. Layer the chili pieces in a 9×13-inch baking dish.
  6. Sprinkle half of the shredded Cheddar over the chilies and add all the cooked beef on top.
  7. Add another layer of chilies and cover with the remaining cheese.
  8. Combine the eggs, milk, and flour in a bowl, stirring until well mixed.
  9. Evenly pour the egg mixture over the layered dish and sprinkle with the last of the cheese.
  10. Bake the dish for 45-60 minutes until the edges are golden brown.
  11. Serve with salsa and sour cream if you like.

Notes

  • For a healthier twist, consider using ground turkey or chicken instead of beef.
  • Add in extra veggies like bell peppers or spinach for added nutrition.
  • Experiment with different types of cheese to create a unique flavor profile.
