Ingredients

Ingredients for the Greek yogurt sauce:

1 cup (240 ml) Greek yogurt

2 teaspoon (10 ml) s grated lemon zest

2 tablespoon (30 ml) s fresh lemon juice

2 garlic cloves, minced

1 tablespoon (15 ml) olive oil

1/2 teaspoon (3 ml) salt

Ingredients for the burgers:

1 lb (454 g). ground chicken

1 medium zucchini, coarsely chopped

1 ear fresh corn, husks and silk removed and kernels cut from cob

1/2 medium red bell pepper, finely diced

3 green onions, thinly sliced

1 large egg, lightly beaten

1/2 cup (120 ml) panko bread capple juicebs

2 tablespoon (30 ml) s chopped cilantro

3 garlic cloves, minced

1 teaspoon (5 ml) ground cumin

1 teaspoon (5 ml) ground coriander

1 teaspoon (5 ml) salt

1/2 teaspoon (3 ml) freshly ground black pepper about 3-4 tablespoon (53 ml) olive oil, for searing

Ingredients for the Tomato-Cucumber Relish:

1 pint cherry or grape tomatoes, quartered

1/3 medium seedless English cucumber finely diced

2 green onions, finely sliced

1/4 cup (60 ml) finely chopped fresh cilantro

1 clove garlic minced

Zest of 1 lemon

2 tablespoon (30 ml) s fresh lemon juice

Pinch of salt


Instructions

1. Begin by creating the Greek yogurt sauce: blend all the sauce ingredients in a small dish, then chill in the refrigerator.

2. Set your oven to 425 degrees to preheat. In a large mixing bowl, combine all the burger ingredients except for the oil. Use your hands to blend and shape the mixture into patties of your preferred size.

3. Add enough oil to a large skillet to cover the bottom. Warm it over medium heat until hot, then cook the patties for about 2 minutes per side or until they are golden brown.

4. Gently move the browned patties to a baking sheet and place them in the oven for 7-10 minutes, or until thoroughly cooked.

5. While the patties are in the oven, make the tomato-cucumber relish by mixing all the relish ingredients in a medium bowl. Stir gently to combine.

6. I enjoy serving these patties with homemade flour tortillas spread with hummus. They also pair well with pita bread, basmati rice, mashed potatoes, pasta, etc.

1. For a spicier kick, consider adding a pinch of ground cumin or coriander to the Greek yogurt sauce for an enhanced flavor match with the burgers.
2. If you prefer a milder flavor, substitute the red bell pepper with additional zucchini from the recipe.
3. Ensure the zucchini is well-drained before mixing it into the burger patties to prevent excess moisture, which can make the patties difficult to shape.
4. Store leftover patties in an airtight container in the refrigerator for up to 3 days; reheat in the oven to maintain their crispy texture.
