Description

A fresh and flavorful twist on classic burgers featuring ground chicken, zucchini, and corn, served with a light Greek yogurt sauce and a vibrant tomato-cucumber relish.


Ingredients

  • For the Greek Yogurt Sauce:
  • 1 cup Greek yogurt
  • 2 teaspoons grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • For the Burger Mixture:
  • 1 lb ground chicken
  • ½ cup panko bread crumbs
  • 1 medium zucchini, coarsely grated and patted dry
  • 1 large egg, lightly beaten
  • 3 garlic cloves, minced
  • 1 ear fresh corn, kernels removed
  • 3 green onions, thinly sliced
  • ½ medium red bell pepper, finely diced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped cilantro
  • 3-4 tablespoons olive oil (for cooking)
  • For the Tomato-Cucumber Relish:
  • 1 pint cherry or grape tomatoes, quartered
  • medium seedless English cucumber, finely diced
  • 2 green onions, thinly sliced
  • 1 clove garlic, minced
  • ¼ cup finely chopped fresh cilantro
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Pinch of salt


Instructions

  1. Prepare the Greek Yogurt Sauce by mixing together the Greek yogurt, lemon zest, lemon juice, minced garlic, olive oil, and salt. Cover and refrigerate.
  2. Preheat your oven to 425°F.
  3. Make the Burger Mixture by combining the ground chicken, panko bread crumbs, grated zucchini, beaten egg, minced garlic, fresh corn, sliced green onions, diced red bell pepper, ground cumin, salt, ground coriander, black pepper, and chopped cilantro in a large bowl. Mix gently to combine and form into 4-5 patties.
  4. Sear the burgers by heating olive oil in a frying pan over medium heat. Cook each patty for about 2 minutes on each side until golden brown.
  5. Transfer the seared burgers to a baking sheet and bake for 7-10 minutes until fully cooked, reaching an internal temperature of 165°F.
  6. Prepare the Tomato-Cucumber Relish by mixing together the tomatoes, cucumber, green onions, garlic, cilantro, lemon zest, lemon juice, and a pinch of salt in a bowl. Let sit to meld flavors.
  7. Serve the burgers on buns, pita bread, or wrapped in lettuce leaves, topped with Greek yogurt sauce and tomato-cucumber relish. Enjoy!
