Ingredients
- 9 ounces (255 g) beef noodles (ramen noodles), 3 packages, discard the seasoning packets
- 2 chicken breasts, thinly sliced
- Salt and Pepper, to taste
- 2 tablespoons (30 ml) vegetable oil
- 4 cups (600 g) Assorted vegetables, bell peppers, broccoli, mushrooms, snap peas, etc.
- 1/3 cup (80 ml) water
- 2 teaspoons (10 g) corn starch
- 2 tablespoons (30 ml) soy sauce
- 1/4 cup (60 ml) hoisin sauce, can sub oyster sauce
- 1 tablespoon (15 ml) ginger paste or grated ginger
- 1 tablespoon (15 ml) minced garlic
- 1/2 tablespoon (7.5 ml) sesame seeds
- 1 teaspoon (5 ml) sriracha
- 1/2 cup (120 ml) chicken broth or pasta water, optional
Instructions
- Remove the seasoning packets from the ramen.
- Fill a large pot with water and bring it to a boiling point.
- Submerge the ramen noodles in the boiling water for 3 minutes until they are just soft.
- Set aside 1/2 cup of the water used to cook the noodles.
- Drain the noodles and set them aside.
- In a bowl, combine the sauce components, leaving out the reserved pasta water or chicken broth. Set this mixture aside.
- Heat a wok or large frying pan over medium-high heat for about 5 minutes before beginning to cook.
- Pour 1 tablespoon of vegetable oil into the wok. Cook the sliced chicken in batches to avoid overcrowding, until it’s fully cooked and has a nice brown color. Remove the chicken and set it aside.
- In the same wok, add the remaining tablespoon of oil as needed.
- Toss in the mixed vegetables and stir-fry them for 3-4 minutes until they reach the crispiness you prefer.
- Put the cooked chicken back into the wok.
- Drizzle the prepared sauce over the chicken and vegetables.
- Stir-fry for 1 minute until the sauce begins to thicken.
- Add the cooked ramen noodles and mix everything thoroughly until the noodles are well-coated and heated through.
- For a dish with more sauce, gradually incorporate up to 1/2 cup of the reserved pasta water or chicken broth until the sauce reaches your desired thickness.
- Serve the Chicken Ramen Stir Fry on plates or in bowls.
- Optionally, garnish with chopped green onions, sesame seeds, or a dash of sriracha, if you like.
