Description

Learn how to make a delicious Chicken Ramen Stir Fry in just 30 minutes with our simple recipe. Perfect for a quick and satisfying meal!


Ingredients

  • 9 ounces (255 g) beef noodles (ramen noodles), 3 packages, discard the seasoning packets
  • 2 chicken breasts, thinly sliced
  • Salt and Pepper, to taste
  • 2 tablespoons (30 ml) vegetable oil
  • 4 cups (600 g) Assorted vegetables, bell peppers, broccoli, mushrooms, snap peas, etc.
  • 1/3 cup (80 ml) water
  • 2 teaspoons (10 g) corn starch
  • 2 tablespoons (30 ml) soy sauce
  • 1/4 cup (60 ml) hoisin sauce, can sub oyster sauce
  • 1 tablespoon (15 ml) ginger paste or grated ginger
  • 1 tablespoon (15 ml) minced garlic
  • 1/2 tablespoon (7.5 ml) sesame seeds
  • 1 teaspoon (5 ml) sriracha
  • 1/2 cup (120 ml) chicken broth or pasta water, optional


Instructions

  1. Remove the seasoning packets from the ramen.
  2. Fill a large pot with water and bring it to a boiling point.
  3. Submerge the ramen noodles in the boiling water for 3 minutes until they are just soft.
  4. Set aside 1/2 cup of the water used to cook the noodles.
  5. Drain the noodles and set them aside.
  6. In a bowl, combine the sauce components, leaving out the reserved pasta water or chicken broth. Set this mixture aside.
  7. Heat a wok or large frying pan over medium-high heat for about 5 minutes before beginning to cook.
  8. Pour 1 tablespoon of vegetable oil into the wok. Cook the sliced chicken in batches to avoid overcrowding, until it’s fully cooked and has a nice brown color. Remove the chicken and set it aside.
  9. In the same wok, add the remaining tablespoon of oil as needed.
  10. Toss in the mixed vegetables and stir-fry them for 3-4 minutes until they reach the crispiness you prefer.
  11. Put the cooked chicken back into the wok.
  12. Drizzle the prepared sauce over the chicken and vegetables.
  13. Stir-fry for 1 minute until the sauce begins to thicken.
  14. Add the cooked ramen noodles and mix everything thoroughly until the noodles are well-coated and heated through.
  15. For a dish with more sauce, gradually incorporate up to 1/2 cup of the reserved pasta water or chicken broth until the sauce reaches your desired thickness.
  16. Serve the Chicken Ramen Stir Fry on plates or in bowls.
  17. Optionally, garnish with chopped green onions, sesame seeds, or a dash of sriracha, if you like.
