Ingredients

  • – 3 tablespoons (45 ml) vegetable oil
  • – 1 small yellow onion, diced
  • – 12 ounces (340 g) beef, diced
  • – 1/2 teaspoon (3 ml) garlic powder
  • – 1/2 teaspoon (3 ml) sweet paprika
  • – 1/4 teaspoon (1 ml) onion powder
  • – 8 ounces (227 g) sliced mushrooms
  • – Salt, to taste
  • – Fresh ground pepper, to taste
  • – 3 cloves garlic, minced
  • – 1 1/4 cups (300 ml) long grain white rice
  • – 3 cups (720 ml) low sodium chicken broth
  • – Grated Parmesan, for garnish
  • – Chopped fresh parsley, for garnish


Instructions

  1. Set your oven to 375°F to preheat.
  2. In a large ovenproof skillet, combine vegetable oil and heat on medium-high until warm.
  3. Add the diced onion and sauté for a couple of minutes.
  4. Season the beef with garlic powder, paprika, and onion powder.
  5. Introduce the seasoned beef to the skillet, cooking for about 5 minutes until it turns golden on all sides.
  6. Mix in the sliced mushrooms, adding a pinch of salt and freshly ground pepper; continue to sauté for 4 minutes, stirring often, until the mushrooms become soft.
  7. Stir in the minced garlic.
  8. Incorporate the rice and cook for an additional minute.
  9. Pour in the chicken broth, raise the heat to high, and allow the mixture to come to a boil.
  10. Turn off the heat, cover the skillet with a lid, and place it in the oven to bake for 30 minutes.
  11. Take off the cover and bake for an extra 3 minutes, or until the liquid is fully absorbed.
  12. Remove the skillet from the oven and let it rest for 5 minutes.
  13. Finish with a sprinkle of grated Parmesan and a garnish of chopped fresh parsley before serving.
