Ingredients
- – 3 tablespoons (45 ml) vegetable oil
- – 1 small yellow onion, diced
- – 12 ounces (340 g) beef, diced
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) sweet paprika
- – 1/4 teaspoon (1 ml) onion powder
- – 8 ounces (227 g) sliced mushrooms
- – Salt, to taste
- – Fresh ground pepper, to taste
- – 3 cloves garlic, minced
- – 1 1/4 cups (300 ml) long grain white rice
- – 3 cups (720 ml) low sodium chicken broth
- – Grated Parmesan, for garnish
- – Chopped fresh parsley, for garnish
Instructions
- Set your oven to 375°F to preheat.
- In a large ovenproof skillet, combine vegetable oil and heat on medium-high until warm.
- Add the diced onion and sauté for a couple of minutes.
- Season the beef with garlic powder, paprika, and onion powder.
- Introduce the seasoned beef to the skillet, cooking for about 5 minutes until it turns golden on all sides.
- Mix in the sliced mushrooms, adding a pinch of salt and freshly ground pepper; continue to sauté for 4 minutes, stirring often, until the mushrooms become soft.
- Stir in the minced garlic.
- Incorporate the rice and cook for an additional minute.
- Pour in the chicken broth, raise the heat to high, and allow the mixture to come to a boil.
- Turn off the heat, cover the skillet with a lid, and place it in the oven to bake for 30 minutes.
- Take off the cover and bake for an extra 3 minutes, or until the liquid is fully absorbed.
- Remove the skillet from the oven and let it rest for 5 minutes.
- Finish with a sprinkle of grated Parmesan and a garnish of chopped fresh parsley before serving.
