Ingredients
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup cooked chicken, shredded
- 1 cup fresh or frozen gnocchi
- 1 cup spinach
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1/4 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion, carrots, and celery and sauté until softened.
- Stir in the minced garlic and Italian seasoning; cook for another minute.
- Pour in the chicken broth and bring to a simmer.
- Add the shredded chicken and gnocchi; cook according to gnocchi package instructions until tender.
- Stir in the heavy cream and spinach; cook until spinach wilts and the soup is heated through.
