Description

A comforting and creamy Chicken Gnocchi Soup filled with tender gnocchi, hearty chicken, and fresh vegetables, perfect for chilly evenings.


Ingredients

  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked chicken, shredded
  • 1 cup fresh or frozen gnocchi
  • 1 cup spinach
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion, carrots, and celery and sauté until softened.
  2. Stir in the minced garlic and Italian seasoning; cook for another minute.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the shredded chicken and gnocchi; cook according to gnocchi package instructions until tender.
  5. Stir in the heavy cream and spinach; cook until spinach wilts and the soup is heated through.
