Ingredients

  • 5 1/2 cups (1.3 kg) shredded cooked chicken
  • 2 cups (300 g) cubed beef
  • 4 tablespoons (60 ml) vegetable oil
  • 1/4 cup (30 g) all-purpose flour
  • 2 cups (480 ml) milk
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 tablespoon (15 ml) lemon juice
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/4 teaspoon (1 ml) salt (add more to taste)
  • 1 1/4 cups (125 g) shredded cheddar cheese
  • 1/4 cup (25 g) grated alternative cheese
  • 1 cup (100 g) bread crumbs
  • 2 tablespoons (30 ml) vegetable oil, melted


Instructions

  1. Set your oven to 350°F and grease a 9×13 baking dish with cooking spray.
  2. Place the shredded chicken as the first layer in the baking dish. Arrange the cubed beef on top of the chicken.
  3. To make the cheese sauce, warm the vegetable oil in a saucepan over medium heat. Sprinkle in the flour and cook for 1-2 minutes until it becomes dry and forms clumps. Gradually whisk in the milk. Mix in the Dijon mustard, lemon juice, garlic powder, and salt. Continue whisking for 3-5 minutes until the sauce thickens. Take it off the heat and incorporate the shredded cheddar cheese and grated alternative cheese. Taste and adjust the salt if necessary. Evenly pour this mixture over the beef and chicken layers.
  4. To prepare the breadcrumb topping, mix the breadcrumbs with the melted vegetable oil in a small bowl. Spread this evenly over the casserole.
  5. Bake without a cover for 30-35 minutes until the topping turns golden and the casserole is bubbly. Allow it to cool for 5-10 minutes before serving. This dish can be enjoyed on its own or served over pasta or rice.
