Ingredients

  • 4 cups Boneless skinless chicken breasts (cooked, cubed or shredded) (960 ml)
  • 8 slices Beef bacon (cooked, chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Ranch dressing (240 ml)
  • 1 cup Mozzarella cheese (shredded, divided) (240 g)
  • 1 cup Cheddar cheese (shredded, divided) (240 g)
  • 5 cups Broccoli (cut into florets) (750 g)
  • 1 lb Frozen spinach (thawed, squeezed to drain well) (450 g)

Instructions

  1. Start by preheating your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked and cubed chicken breasts with the chopped beef bacon.
  3. Add the minced garlic to the chicken and bacon mixture and stir well.
  4. Pour the ranch dressing over the mixture and toss until everything is evenly coated.
  5. Take half of the shredded mozzarella and cheddar cheeses and blend them into the mixture.
  6. Incorporate the broccoli florets, ensuring they are mixed thoroughly with the other ingredients.
  7. Squeeze out any excess moisture from the thawed spinach and add it to the bowl, mixing everything together.
  8. Transfer the combined ingredients into a casserole dish, spreading them out evenly.
  9. Sprinkle the remaining mozzarella and cheddar cheeses on top of the casserole.
  10. Place the dish in the preheated oven and allow it to bake for about 25-30 minutes or until the top is golden brown and bubbly.
  11. Once cooked, remove the casserole from the oven and let it cool slightly before serving.

Notes

  • Thoroughly drain the spinach after thawing to prevent excess moisture.
  • Broil the casserole briefly after baking for a crispy golden topping.
  • Try different cheese blends like pepper jack or smoked gouda for extra flavor.
