- 8 slices Beef bacon (cooked, chopped)
- 3 cloves Garlic (minced)
- 1 cup Ranch dressing (240 ml)
- 1 cup Mozzarella cheese (shredded, divided) (240 g)
- 1 cup Cheddar cheese (shredded, divided) (240 g)
- 5 cups Broccoli (cut into florets) (750 g)
- 1 lb Frozen spinach (thawed, squeezed to drain well) (450 g)
Instructions
- Start by preheating your oven to 375°F (190°C).
- In a large bowl, combine the cooked and cubed chicken breasts with the chopped beef bacon.
- Add the minced garlic to the chicken and bacon mixture and stir well.
- Pour the ranch dressing over the mixture and toss until everything is evenly coated.
- Take half of the shredded mozzarella and cheddar cheeses and blend them into the mixture.
- Incorporate the broccoli florets, ensuring they are mixed thoroughly with the other ingredients.
- Squeeze out any excess moisture from the thawed spinach and add it to the bowl, mixing everything together.
- Transfer the combined ingredients into a casserole dish, spreading them out evenly.
- Sprinkle the remaining mozzarella and cheddar cheeses on top of the casserole.
- Place the dish in the preheated oven and allow it to bake for about 25-30 minutes or until the top is golden brown and bubbly.
- Once cooked, remove the casserole from the oven and let it cool slightly before serving.
Notes
- Thoroughly drain the spinach after thawing to prevent excess moisture.
- Broil the casserole briefly after baking for a crispy golden topping.
- Try different cheese blends like pepper jack or smoked gouda for extra flavor.
