Description

A delicious sandwich featuring grilled chicken, creamy avocado, and melted cheese, all encased in perfectly toasted bread.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the chicken for 6–7 minutes per side until fully cooked.
  4. Let the chicken rest before slicing it thinly.
  5. Slice the avocado, red onion, and tomato. Prepare the cheese slices and set them aside.
  6. Spread mayonnaise and Dijon mustard on each slice of bread.
  7. On two slices of bread, layer the chicken, avocado, cheese, red onion, and tomato.
  8. Top with the remaining bread slices, mayo side down.
  9. Heat a skillet or grill pan over medium heat.
  10. Add butter or olive oil and cook the sandwiches for 3–4 minutes per side until golden and the cheese is melted.
  11. Press gently with a spatula while grilling.
  12. Remove from heat, let cool for one minute, slice in half, and serve warm.

Notes

Allow the chicken to rest after cooking to keep it juicy. Consider adding lime juice over the avocado for a zesty twist.
