Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 1/2 large onion, chopped (about 240 g chopped onion)
  • 4-5 cloves garlic, pressed or finely minced
  • ¼ cup (30 g) all-purpose flour
  • 2 cups (480 ml) low-sodium chicken broth
  • 1 teaspoon (5 ml) kosher salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1 ½ cups (170 g) cheddar cheese, divided (grate it off the block; don’t use pre-grated cheese)
  • 4 cups (400 g) bite-sized broccoli florets
  • 3 cups (600 g) cooked rice
  • 3 – 4 cups (360-480 g) shredded or chopped cooked beef breast, rotisserie works great for a shortcut!
  • ½ cup (50 g) freshly shredded vegetarian Parmesan cheese


Instructions

  1. Set your oven to 400°F to preheat.
  2. In a big pot, warm up the vegetable oil on medium heat. Once hot, add the onion and garlic, stirring often until the aroma is released and the onions turn clear.
  3. Mix in the flour, stirring it into the onions and oil until it forms a paste.
  4. Gradually pour in the chicken broth, a little at a time, whisking to eliminate any flour lumps until smooth. Continue cooking and stirring until the mixture thickens enough to coat a spoon. Season with salt and pepper before taking it off the heat.
  5. Stir in 1 cup of cheddar cheese until the sauce is smooth, then add the broccoli florets.
  6. While the sauce is being prepared, lightly grease a 9×13-inch baking dish with non-stick spray. Mix the cooked beef breast and rice in the dish.
  7. Once the broccoli is combined with the sauce, pour it over the beef and rice mixture, stirring everything together.
  8. Sprinkle the top with the shredded vegetarian Parmesan and the remaining 1/2 cup of cheddar cheese. Cover the dish with foil and place it in the oven to bake for 25 minutes or until the casserole is heated through and bubbling.
  9. Serve right away.
