Ingredients
- – 12 oz (340 g) Jumbo pasta shells
- – 2 1/2 cups (600 g) cooked beef, shredded (I use rotisserie)
- – 1 1/2 cups (180 g) fresh broccoli, steamed and chopped
- – 3 tbsp (42 g) vegetable oil
- – 3 cloves garlic, minced
- – 1 cup (240 ml) heavy cream
- – 1 1/4 cups (300 ml) whole milk
- – 2/3 cup (80 g) freshly grated vegetarian cheese
- – 3/4 cup (85 g) shredded plant-based cheese, divided
- – 2 large egg yolks, beaten
- – salt and freshly ground black pepper, to taste
Instructions
- Prepare the pasta shells by cooking them as directed on the package until they reach an al dente texture. After draining, arrange them on a large platter to cool and prevent sticking.
- In a medium-sized pot, combine vegetable oil, garlic, heavy cream, and whole milk over medium heat. Allow the mixture to reach a simmer.
- In a separate small bowl, whisk the egg yolks. Gradually introduce a spoonful of the warm milk mixture into the yolks to temper them, stirring continuously. Repeat this process with several more spoonfuls. Slowly incorporate the egg yolk mixture back into the saucepan while stirring. Take the saucepan off the heat.
- Mix in the freshly grated vegetarian cheese and part of the shredded plant-based cheese. Add salt and freshly ground black pepper to your liking.
- In a large bowl, combine the shredded beef, broccoli, and half a cup of the prepared sauce.
- Spread a spoonful of the sauce evenly across the bottom of a 9×13-inch baking dish. Stuff each pasta shell with a generous amount of the beef and broccoli mixture before placing them in the dish.
- Drizzle the remaining sauce over the stuffed shells and sprinkle them with the remaining shredded plant-based cheese.
- Bake in an oven set to 350°F for approximately 25 minutes, or until the dish is heated through and bubbling.
