Ingredients
- – 12 ounces (340 g) penne pasta, cooked in salted water according to package directions
- – 3 cups (720 ml) diced cooked beef
- – 3 tablespoons (45 ml) vegetable oil
- – 2 tablespoons (30 ml) cornstarch
- – 1 teaspoon (5 ml) minced garlic
- – 2 cups (480 ml) whole milk
- – 1 cup (240 ml) coconut cream
- – 3/4 cup (180 g) grated plant-based parmesan cheese
- – 2 cups (480 g) shredded plant-based mozzarella cheese, divided use
- – salt and pepper to taste
- – cooking spray
- – 1 tablespoon (15 ml) chopped parsley
Instructions
- Set your oven to a temperature of 375 degrees Fahrenheit and lightly grease a baking dish that holds 3 quarts with some cooking spray.
- In a large skillet, warm the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds. Stir in the cornstarch and continue cooking for another minute.
- Gradually add the whole milk and coconut cream, continuously whisking until the mixture begins to thicken.
- Incorporate the plant-based parmesan and half a cup of the shredded mozzarella into the milk mixture, seasoning with salt and pepper as desired.
- Keep stirring until the cheese is fully melted and blended.
- Combine the cooked penne pasta and diced cooked beef in a large bowl. Pour the cheese sauce over them and mix until everything is well-coated.
- Transfer this pasta and sauce blend into the greased baking dish, then sprinkle the remaining mozzarella cheese on top.
- Place the dish in the oven and bake without a cover for about 20 minutes, or until the pasta is bubbly and the cheese on top starts to turn golden brown.
- Garnish with chopped parsley before serving.
