Ingredients

  • – 12 ounces (340 g) penne pasta, cooked in salted water according to package directions
  • – 3 cups (720 ml) diced cooked beef
  • – 3 tablespoons (45 ml) vegetable oil
  • – 2 tablespoons (30 ml) cornstarch
  • – 1 teaspoon (5 ml) minced garlic
  • – 2 cups (480 ml) whole milk
  • – 1 cup (240 ml) coconut cream
  • – 3/4 cup (180 g) grated plant-based parmesan cheese
  • – 2 cups (480 g) shredded plant-based mozzarella cheese, divided use
  • – salt and pepper to taste
  • – cooking spray
  • – 1 tablespoon (15 ml) chopped parsley


Instructions

  1. Set your oven to a temperature of 375 degrees Fahrenheit and lightly grease a baking dish that holds 3 quarts with some cooking spray.
  2. In a large skillet, warm the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds. Stir in the cornstarch and continue cooking for another minute.
  3. Gradually add the whole milk and coconut cream, continuously whisking until the mixture begins to thicken.
  4. Incorporate the plant-based parmesan and half a cup of the shredded mozzarella into the milk mixture, seasoning with salt and pepper as desired.
  5. Keep stirring until the cheese is fully melted and blended.
  6. Combine the cooked penne pasta and diced cooked beef in a large bowl. Pour the cheese sauce over them and mix until everything is well-coated.
  7. Transfer this pasta and sauce blend into the greased baking dish, then sprinkle the remaining mozzarella cheese on top.
  8. Place the dish in the oven and bake without a cover for about 20 minutes, or until the pasta is bubbly and the cheese on top starts to turn golden brown.
  9. Garnish with chopped parsley before serving.
