Description

Ingredients

  • 1 ¾ cups flour
  • 1/3 cup good quality cocoa
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • ¾ cup butter
  • 2 cups brown sugar (packed)
  • 1 ounce unsweetened baker’s chocolate (melted)
  • 2 eggs
  • 3 tsp vanilla extract
  • 1 cup fresh cherries, chopped
  • 1/3 cup fresh cherries, chopped (for frosting)
  • ¼ cup cream cheese
  • ¼ cup butter (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 2 ½ cups icing sugar (powdered sugar)
  • 1 tbsp milk


Instructions

  1. Sift together the flour, cocoa, baking powder, salt, and baking soda in a bowl then set aside.
  2. Melt the butter over low heat in a separate saucepan. Once melted, remove it from the heat and stir in the brown sugar, melted chocolate, eggs, and vanilla extract.
  3. Stir this mixture slowly until the sugar completely dissolves.
  4. Gradually mix in the dry ingredients until well combined.
  5. Fold in the chopped fresh cherries.
  6. Spread the brownie batter into your greased or parchment-lined baking pan.
  7. Bake for about 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs.
  8. Allow the brownies to cool completely before frosting.
  9. To make the frosting, mix all frosting ingredients until smooth and fluffy. Fold in the remaining chopped cherries and spread over the cooled brownies.
