Description

A delightful dessert combining fluffy chocolate cake layers with a luxurious cherry filling, perfect for any occasion.


Ingredients

  • 2 large eggs
  • 1 large egg yolk
  • 1 cup Imperial Sugar Extra Fine Granulated Sugar
  • 1 tablespoon vanilla extract
  • Pinch salt
  • 1 cup minus 2 tablespoons all-purpose flour
  • 4 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 tablespoon unsalted butter
  • 1 bag (16 oz) frozen red tart cherries
  • 18 ounces milk chocolate
  • 2 teaspoons gelatin
  • 2 tablespoons water
  • 1 cup milk (for the filling)
  • 3 tablespoons Imperial Sugar Extra Fine Granulated Sugar (for the filling)
  • 1 1/2 cups heavy cream
  • 1/2 cup whipping cream
  • 1 tablespoon Imperial Sugar Extra Fine Granulated Sugar (for topping)
  • 1 teaspoon vanilla extract (for topping)
  • Handful fresh cherries (for garnish)


Instructions

  1. Preheat your oven to 350°F and grease the cake pan.
  2. Whisk the eggs, egg yolk, sugar, vanilla extract, and salt until combined.
  3. Sift together the flour, cocoa powder, and baking powder in another bowl.
  4. Gradually mix the dry ingredients with the wet ingredients, alternating with the milk and melted butter.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean from the center.
  6. Prepare the cherry filling by melting frozen cherries, milk chocolate, gelatin, and water over low heat, stirring until smooth.
  7. Whip the heavy cream until stiff peaks form, then fold into the chocolate-cherry mixture.
  8. Allow the cake to cool completely before layering it with the chocolate-cherry filling.
  9. Whip the whipping cream, sugar, and vanilla extract until soft peaks form, then spread over the cake and garnish with fresh cherries.

Notes

Using a quality cocoa powder and chocolate will enhance the flavor. Chill the cake for at least 2 hours after layering to set the mousse properly.
