Description

A delightful Cherry Cake recipe that combines rich flavors and unique textures for a perfect dessert.


Ingredients

  • 200 g glacé cherries (keep a few for decoration)
  • 225 g self-raising flour
  • 160 g butter, at room temperature
  • 160 g caster sugar
  • 3 large eggs
  • 25 g ground almonds
  • 1 teaspoon vanilla extract (5 ml)


Instructions

  1. Preheat your oven to 350°F (180°C) and prepare your round cake pan by greasing and lining it.
  2. In a mixing bowl, cream together the room temperature butter and caster sugar until light and fluffy.
  3. Beat in the eggs one at a time, making sure each is well incorporated before adding the next.
  4. Stir in the vanilla extract, followed by ground almonds and the self-raising flour. Mix until just combined.
  5. Gently fold the chopped glacé cherries into the batter, ensuring an even distribution throughout.
  6. Pour the mixture into the prepared cake pan and smooth the top.
  7. Decorate with the reserved glacé cherries on top.
  8. Bake in the preheated oven for about 25–30 minutes or until a skewer inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

For a cherry kick, drizzle some cherry syrup over the cooled cake before serving. To prevent cherries from sinking, dust them lightly with flour before adding to the batter.
