A delightful Cherry Cake recipe that combines rich flavors and unique textures for a perfect dessert.
Ingredients
- 200 g glacé cherries (keep a few for decoration)
- 225 g self-raising flour
- 160 g butter, at room temperature
- 160 g caster sugar
- 3 large eggs
- 25 g ground almonds
- 1 teaspoon vanilla extract (5 ml)
Instructions
- Preheat your oven to 350°F (180°C) and prepare your round cake pan by greasing and lining it.
- In a mixing bowl, cream together the room temperature butter and caster sugar until light and fluffy.
- Beat in the eggs one at a time, making sure each is well incorporated before adding the next.
- Stir in the vanilla extract, followed by ground almonds and the self-raising flour. Mix until just combined.
- Gently fold the chopped glacé cherries into the batter, ensuring an even distribution throughout.
- Pour the mixture into the prepared cake pan and smooth the top.
- Decorate with the reserved glacé cherries on top.
- Bake in the preheated oven for about 25–30 minutes or until a skewer inserted into the center comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
For a cherry kick, drizzle some cherry syrup over the cooled cake before serving. To prevent cherries from sinking, dust them lightly with flour before adding to the batter.
