Description

A comforting casserole made with leftover turkey, vibrant broccoli, and creamy cheddar cheese, perfect for busy weeknights.


Ingredients

  • 2 cups leftover turkey, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice or quinoa
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded turkey, steamed broccoli, cooked rice or quinoa, 1/2 cup of the cheddar cheese, cream of mushroom soup, milk, garlic powder, salt, and pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Sprinkle the remaining cheddar cheese on top.
  6. If using, add breadcrumbs for extra crunch.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
