Ingredients
- – 1 cup (240 ml) Cheddar cheese, shredded
- – 1 cup (240 ml) Monterey Jack Cheese, shredded
- – 4 oz. (1/3 cup or 90 g) Beef sausage, cut into cubes
- – 1 lb. (454 g) Ground Beef, 85% lean
- – 1 Tablespoon (15 ml) Vegetable oil
- – 2 cloves Garlic, minced
- – 1 oz (28 g). packet Taco Seasoning
- – 1 Tablespoon (15 ml) Worcestershire sauce
- – 2 Tablespoons (30 ml) Tomato paste
- – 1 cup (240 ml) Beef broth
- – 1 cup (240 ml) Chicken broth
- – 1 cup (240 ml) Whole milk, at room temp
- – 1 (10 oz. or 280 g) can Rotel Tomatoes with green chilies, undrained
- – 1/2 lb. (225 g) Medium pasta shells, see notes
Instructions
- Grate the cheddar and Monterey Jack cheese from whole pieces and keep them aside, ensuring they are close to room temperature before adding them to the pasta mixture.
- In a pot with high sides or a Dutch oven, cook the ground beef over medium-high heat, breaking it apart as it cooks. Remove any excess fat.
- In the same pot, melt the butter and sauté the minced garlic for 1 minute.
- Add all other ingredients except the cheese and pasta to the pot. Mix thoroughly.
- Allow it to come to a mild boil. Introduce the pasta, ensuring it’s covered by the liquid. Put on the lid and cook following the time suggested on the pasta package. Use a silicone spatula to gently scrape the bottom of the pot midway through cooking to prevent sticking.
- Take off the lid and check if the pasta is cooked to your liking by tasting a piece. If necessary, cover and cook a bit longer to reach the desired texture.
- Reduce the heat to low. Slowly incorporate the cheese, stirring until it melts completely.
- Expect a lot of sauce, but it will thicken as it stands and the pasta will soak up more of it.
- Serve when the sauce reaches the thickness you prefer.
