Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green pepper, diced
  • 1 cup (240 ml) frozen corn kernels
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can pinto beans, drained and rinsed
  • 1 15-ounce can red kidney beans, drained and rinsed
  • 1 teaspoon (5 g) chili powder
  • 1 teaspoon (5 g) ground cumin
  • ½ teaspoon (2.5 g) smoked paprika
  • ½ teaspoon (2.5 g) dried oregano
  • ¼ teaspoon (1.25 g) cayenne pepper or more to taste, optional
  • 2 cups (480 ml) jarred chunky-style salsa
  • 8 to 9 cups (200-250 g) corn tortilla chips
  • 1 ¼ cups (150 g) shredded cheddar cheese
  • 1 ¼ cups (150 g) shredded pepper jack cheese
  • Assorted toppings such as sliced avocado, sliced green onions, sliced jalapenos, diced tomatoes, plain Greek yogurt, additional salsa, hot sauce


Instructions

  1. Set the oven temperature to 375ºF. Use a light coating of cooking spray or oil to prepare a 9 x 13-inch baking dish, then put it aside.
  2. Heat a large skillet over medium heat and pour in the olive oil. Once the oil is heated, add the diced onion and stir occasionally until it begins to soften, which should take around 2 minutes.
  3. Introduce the minced garlic and cook until its aroma is noticeable, roughly 30 seconds.
  4. Add the diced green pepper and corn kernels, stirring occasionally until they are tender, approximately 5 minutes.
  5. Incorporate the black beans, pinto beans, red kidney beans, chili powder, cumin, paprika, oregano, cayenne pepper (if using), and salsa. Mix everything together and let it heat through for about 1 minute before taking it off the stove.
  6. Distribute half of the corn tortilla chips evenly in the prepared baking dish.
  7. Spoon half of the bean and vegetable mixture over the chips in small portions.
  8. Sprinkle half of the shredded cheddar cheese and half of the pepper jack cheese evenly over the top.
  9. Add the remaining tortilla chips on top, then layer with the rest of the bean mixture, and finish by sprinkling the remaining cheddar and pepper jack cheeses.
  10. Place in the oven and bake until the cheese is melted and the dish is thoroughly heated, approximately 20 minutes.
  11. Serve the casserole with your choice of toppings.
