Ingredients
- 1 cup (240 ml) of long grain white rice
- 2 tablespoon (30 ml) s of olive oil
- 1 small onion finely chopped
- 1 tablespoon (15 ml) of minced garlic
- 2 cup (480 ml) s of chicken broth
- 8 ounce (227 g) s of tomato sauce
- 1/2 teaspoon (3 ml) of salt
- 1/2 teaspoon (3 ml) of black pepper
- 1 teaspoon (5 ml) of ground cumin
- 1 teaspoon (5 ml) of dried cilantro
- 1 pound (454 g) of beef steak sliced
- 2 tablespoon (30 ml) s of vegetable oil
- Seasoning with Montreal steak spice to taste
- Pancho’s White Queso sufficient for drizzling
- Fresh cilantro chopped, for garnishing
- Flour tortillas for serving
Instructions
- Rice Preparation: Start by warming the olive oil in a large pan over medium heat. Once heated, add the rice, stirring constantly until it takes on a light golden color, making sure it doesn’t burn. Next, add the chopped onion and minced garlic, continuing to cook on medium-low heat until they become aromatic and transparent.
- Cooking the Rice: Add the chicken broth and tomato sauce to the pan with the rice. Mix well to combine all components. Increase the heat to bring the mixture to a rapid boil, then let it boil for two minutes. Lower the heat to a gentle simmer, cover the pan, and let the rice cook for 20 minutes until the liquid is absorbed and the rice is tender.
- Steak Preparation: At the same time, heat vegetable oil in a separate large pan over medium-high heat. Place the sliced beef steak in the pan, seasoning it well with Montreal steak spice. Cook the steak, stirring occasionally, until it is cooked to your liking. Once done, remove it from the pan.
- Finalizing the Rice: Once the rice has cooked for the specified time, turn off the heat but keep the pan covered. Allow the rice to rest covered for another 10 minutes, letting it continue to absorb flavors and reach the perfect consistency.
- Assembly and Service: For serving, gently fluff the rice with a fork and spread it on a serving dish. Arrange the cooked steak on top of the rice, then generously drizzle Pancho’s White Queso over both. Optionally, sprinkle with freshly chopped cilantro. Serve with warm flour tortillas for a complete dish.
