Ingredients
- 2 pounds (907 g) (about 900 grams) potatoes
- 3 cups (720 ml) (about 90 grams) fresh spinach, chopped
- 1 cup (240 ml) (about 115 grams) shredded cheddar cheese
- 1/2 cup (120 ml) (about 120 milliliters) heavy cream
- 1/2 cup (120 ml) (about 120 milliliters) milk
- 2 tablespoons (30 ml) (about 28 grams) butter
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1/4 teaspoon (1 ml) nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and thinly slice the potatoes.
- Grease a baking dish with 1 tablespoon of butter.
- In a skillet, melt the remaining 1 tablespoon of butter over medium heat.
- Add minced garlic to the skillet and sauté for 1 minute.
- Add chopped spinach to the skillet and cook until wilted.
- In a bowl, mix heavy cream, milk, salt, black pepper, and nutmeg.
- Layer half of the sliced potatoes in the prepared baking dish.
- Spread half of the spinach mixture over the potato layer.
- Sprinkle half of the shredded cheddar cheese over the spinach.
- Repeat the layers with the remaining potatoes, spinach, and cheese.
- Pour the cream mixture evenly over the layers in the dish.
- Cover the baking dish with foil.
- Bake in the preheated oven for 45 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is golden.
- Allow the dish to cool for 5 minutes before serving.
