Ingredients

  • 2 pounds (907 g) (about 900 grams) potatoes
  • 3 cups (720 ml) (about 90 grams) fresh spinach, chopped
  • 1 cup (240 ml) (about 115 grams) shredded cheddar cheese
  • 1/2 cup (120 ml) (about 120 milliliters) heavy cream
  • 1/2 cup (120 ml) (about 120 milliliters) milk
  • 2 tablespoons (30 ml) (about 28 grams) butter
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/4 teaspoon (1 ml) nutmeg


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and thinly slice the potatoes.
  3. Grease a baking dish with 1 tablespoon of butter.
  4. In a skillet, melt the remaining 1 tablespoon of butter over medium heat.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Add chopped spinach to the skillet and cook until wilted.
  7. In a bowl, mix heavy cream, milk, salt, black pepper, and nutmeg.
  8. Layer half of the sliced potatoes in the prepared baking dish.
  9. Spread half of the spinach mixture over the potato layer.
  10. Sprinkle half of the shredded cheddar cheese over the spinach.
  11. Repeat the layers with the remaining potatoes, spinach, and cheese.
  12. Pour the cream mixture evenly over the layers in the dish.
  13. Cover the baking dish with foil.
  14. Bake in the preheated oven for 45 minutes.
  15. Remove foil and bake for an additional 15 minutes until cheese is golden.
  16. Allow the dish to cool for 5 minutes before serving.

  • For a lighter option, substitute low-fat milk and cream for heavy cream.
