Ingredients

  • 3 large boneless skinless chicken breasts (680 g) cut in half lengthwise to form thinner cutlets
  • 2 Tablespoons (30 ml) vegetable oil divided
  • 3 cloves garlic minced
  • 1 teaspoon (5 ml) Italian seasoning
  • 6 ounces (170 g) dairy-free cream cheese softened
  • 2 cups (60 g) baby spinach leaves
  • 1 cup (120 g) shredded dairy-free Mozzarella cheese


Instructions

  1. Set your oven to 350 degrees Fahrenheit. Lightly coat a 9×13 inch glass baking dish with cooking spray.
  2. Arrange the chicken cutlets in the prepared dish. Pour 1 Tablespoon of vegetable oil evenly over the chicken. Distribute the minced garlic and Italian seasoning over them, followed by a layer of softened cream cheese.
  3. In the meantime, warm a small non-stick skillet over medium heat with the remaining Tablespoon of vegetable oil. Add the baby spinach and cook, stirring, until it wilts. Spread the wilted spinach evenly over the chicken pieces and top with shredded Mozzarella cheese.
  4. Place in the oven and bake for 35 to 40 minutes or until the chicken is fully cooked, reaching an internal temperature of 165 degrees Fahrenheit. Serve hot and savor the flavors!
