Ingredients

  • 1 lb (454 g) beef sausage
  • 1 cup (240 ml) mixed bell peppers diced
  • 1/2 cup (120 ml) onion diced
  • 2 eggs
  • 1 teaspoon (5 ml) chili powder
  • 1/4 teaspoon (1 ml) garlic powder
  • 1/4 teaspoon (1 ml) onion powder
  • 1/2 tsp (3 ml) oregano
  • 1/2 teaspoon (3 ml) paprika
  • 1/2 teaspoon (3 ml) cumin
  • Salt & pepper to taste
  • 8 flour tortillas 8 inch
  • 1 cup (240 ml) cheddar cheese shredded
  • Optional : Salsa, hot sauce or taco sauce


Instructions

  1. In a large frying pan over medium-high heat, cook the beef sausage for 5 minutes, breaking it into smaller bits as it cooks.
  2. Add the diced bell peppers and onions, and continue cooking for an additional 5 minutes while stirring occasionally.
  3. In a separate bowl, beat the eggs with 1 tablespoon of water. Push the sausage mixture to one side of the pan, pour in the eggs, and scramble them until cooked. Combine the eggs with the sausage, peppers, and onions.
  4. Sprinkle in the spices and pour in ¼ cup of water, allowing everything to simmer for 1-2 minutes.
  5. To make the wraps, layer the tortillas with cheese, the sausage mixture, and any other toppings you like. Enjoy your meal!
