Ingredients
- 2 medium potatoes, diced
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup cooked ham or bacon (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chives or green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook until crispy and golden brown, about 10-15 minutes.
- In a bowl, beat the eggs and season with salt and pepper.
- Push the potatoes to one side of the skillet, pour the eggs into the empty side, and scramble until fluffy.
- Mix the cooked potatoes with the scrambled eggs.
- Stir in the cheddar cheese and optional ham or bacon, cooking until the cheese is melted.
- Serve hot, garnished with chives or green onions if desired.
