Description

Delicious Cheesy Pepperoni Pizza Roll-Ups made with low-carb tortillas, mozzarella, pepperoni, and zesty seasonings, perfect for family gatherings.


Ingredients

  • 4 low-carb tortillas or wraps
  • 2 cups shredded mozzarella cheese
  • 1 cup pepperoni slices
  • 1/2 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Optional: Parmesan cheese, olives, bell peppers


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place a low-carb tortilla on a clean surface and spread a layer of tomato sauce over it, leaving a small border around the edges.
  3. Sprinkle shredded mozzarella cheese evenly over the tomato sauce, followed by a layer of pepperoni slices.
  4. Season the filling with Italian seasoning and garlic powder for added flavor.
  5. Starting from one end, tightly roll up the tortilla to create a compact roll.
  6. Place the roll seam side down on the prepared baking sheet.
  7. Repeat the process with the remaining tortillas and filling ingredients.
  8. Bake the roll-ups in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly.
  9. Remove from the oven and let them cool slightly before slicing into bite-sized pieces.
