Ingredients
- 4 low-carb tortillas or wraps
- 2 cups shredded mozzarella cheese
- 1 cup pepperoni slices
- 1/2 cup tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Optional: Parmesan cheese, olives, bell peppers
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Place a low-carb tortilla on a clean surface and spread a layer of tomato sauce over it, leaving a small border around the edges.
- Sprinkle shredded mozzarella cheese evenly over the tomato sauce, followed by a layer of pepperoni slices.
- Season the filling with Italian seasoning and garlic powder for added flavor.
- Starting from one end, tightly roll up the tortilla to create a compact roll.
- Place the roll seam side down on the prepared baking sheet.
- Repeat the process with the remaining tortillas and filling ingredients.
- Bake the roll-ups in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let them cool slightly before slicing into bite-sized pieces.
