Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with cooking spray.
- Whisk the eggs and cottage cheese in a mixing bowl until combined.
- Stir in the shredded cheese and chopped vegetables, seasoning with salt and pepper.
- Pour the mixture into the muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes or until the tops are set and lightly golden.
